Horseradish Mashed Potatoes

INGREDIENTS
  • 1 C whipping cream
  • 1/2 C chicken stock
  • 1/2 C coarsely grated peeled fresh horseradishj
  • 1 3/4 lbs peeled potatoes cut into 1" pieces
DIRECTIONS
  1. Combine cream, stock and horseradish in heavy large saucepan.
  2. Bring to boil, reduce heat to low and simmer until horseradish is tender, about 15 minutes.
  3. Meanwhile, cook potatoes in large pot of boiling salted water until tender, about 15 minutes.
  4. Drain and return to same pot.
  5. Add jorseradish mixture, mash until smooth.
  6. Season with salt and pepper.
