Hot Air (Sponge) Candy

INGREDIENTS
  • 1 cup sugar
  • 1 cup dark corn syrup
  • 1 tbsp. vinegar
  • 1 tbsp. baking soda
DIRECTIONS
  1. Combine sugar, syrup and vinegar in a large heavy saucepan.
  2. Cook over medium heat until mixture reaches 290 - 310 degrees on a candy thermometer.
  3. Remove pan from heat and add baking soda, stirring quickly to mix.
  4. Pour candy into a buttered 9 x 9 x 2” buttered pan.
  5. Let candy spread itself.
  6. When cool break into pieces.
  7. Coat with dipping chocolate if you wish.
