Hot And Sweet Cilantro Salmon
  • 1 lb. salmon, cut into two portions
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp. breadcrumbs
  • 1 tsp. cayenne pepper
  • 1 tbsp. hoisin sauce
  • 1 tbsp soy sauce
  • 1/4 cup olive oil
  1. Preheat oven to 400 degrees. Butter a large casserole dish. Mix all ingredients in a mixing bowl until combined. Lay salmon fillets, skin side down, into casserole. Spread sauce mixture evenly on salmon, reserving a few spoonfuls, and bake for 20 minutes
I'm actually not a fan of salmon, but my husband loves it, so I have done a lot of experimenting to find a recipe that we will both enjoy. This one is simple and fresh, and very flavorful.
