Hot Fudge Cake with Sundae and Strawberries

  • - 1 cup flour
  • 2 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla
  • 1/2 cup packed brown sugar
  • 1 cup water
  • 2 pint basket fresh strawberries, stemmed
  • Vanilla or coffee ice cream
DIRECTIONS
  1. In mixer bowl combine flour, baking powder, 2 tablespoons of the cocoa powder and 2/3 cup of the granulated sugar.
  2. Add milk, butter and vanilla; beat until smooth and well blended.
  3. Spread in greased 8-inch square baking pan; set aside.
  4. In small saucepan combine the remaining 1/3 cup sugar and the remaining 6 tablespoons cocoa powder, the brown sugar and water.
  5. Bring to boil, stirring to dissolve sugar. Gently spoon over cake batter.
  6. Bake in 350-degree oven about 35 minutes until springy to the touch.
  7. While cake is baking, slice strawberries into a bowl and toss with additional sugar to sweeten.
  8. To serve, spoon hot fudge cake and sauce into dessert bowls with scoops of ice cream and sweetened strawberries.
