Huckleberry Buckle

  • 1/3 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder

  • 1/2 cup milk
  • 2 cups huckleberries
  • 1/3 cup flour
  • 1/2 cup sugar
  • 1/4 cup soft butter
  • 1 tsp. cinnamon
  • 2 cups huckleberries
DIRECTIONS
  1. Cream: 1/3 cup shortening and 3/4 cup sugar; add 1 egg and beat well.
  2. Sift together: 2 cups flour, 2 tsp. baking powder and salt.
  3. Add flour mixture alternatively with 1/2 cup milk, to the creamed mixture.
  4. Carefully blend in berries. Spread in a greased 9"x9" pan.
  5. Mix by hand to make topping: 1/3 cup flour, 1/2 cup sugar, 1/4 cup soft butter, 1 tsp. cinnamon.
  6. Put topping on mixture in the pan and bake at 350 degrees for 50 minutes.
