Hudson Chicken

  • 12 boneless, skinless chicken breasts, flattened
  • 2 cups bread crumbs
  • 1 cup parmesan cheese
  • ¼ cup minced onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup melted butter
  • Chopped fresh parsley (optional)
DIRECTIONS
  1. Combine crumbs, cheese, onion, salt, and pepper.
  2. Dip chicken in butter – dredged in crumb mixture.
  3. Roll up chicken breast and stick with toothpick.
  4. Place in shallow baking pan.
  5. Dribble remaining butter over breasts.
  6. Bake 350-degrees covered with foil for ½ hour.
  7. Remove foil and bake for another ½ hour.
  8. Garnish with parsley.
  9. Enjoy!
RECIPE BACKSTORY
When I was typing up all of my mother's old recipes, I happened to come across this one. The handwriting was so smudged I could barely make out the name of the recipe. It looked like "Hudson" (which is a city near our hometown) so it is now Hudson chicken.
