Hudson Chicken
INGREDIENTS
- 12 boneless, skinless chicken breasts, flattened
- 2 cups bread crumbs
- 1 cup parmesan cheese
- ¼ cup minced onion
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup melted butter
- Chopped fresh parsley (optional)
DIRECTIONS
- Combine crumbs, cheese, onion, salt, and pepper.
- Dip chicken in butter – dredged in crumb mixture.
- Roll up chicken breast and stick with toothpick.
- Place in shallow baking pan.
- Dribble remaining butter over breasts.
- Bake 350-degrees covered with foil for ½ hour.
- Remove foil and bake for another ½ hour.
- Garnish with parsley.
- Enjoy!
