Hutspot met Klapstuck - Hotchpotch with ribs from the Netherlands
  • 1 pound beef short ribs
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 carrots, sliced
  • 4 onions, diced
  • 6 potatoes, cut up
  1. Brown meat slightly in oil. Simmer the meat until tender with salt in enough water to cover the meat. Skim the scum of the soup as it simmers. Now lay the potatoes around the meat, then the diced onions, and the sliced carrots. Let all of this stew for at least one hour., then remove the meat. Pour out but save the soup; mash the potatoes, onions and carrots. Add salt and pepper to taste than pour on some of the soup. Serve with the shortribs.
