ITALIAN SAUSAGE TORTELLINI SOUP
INGREDIENTS
- Servings: 8
- 2 Tbsp olive oil
- 1 c chopped onion
- 2 Tbsp minced garlic
- 2 Tbsp Italian seasoning
- 8 c chicken broth
- 1 48 oz can diced tomatoes, pureed
- 4 Italian sausages, mild or hot, sliced
- 10 oz frozen cheese tortellini
- Parmesan cheese for garnish.
DIRECTIONS
- Sauté onions, garlic, and Italian seasoning in olive oil for about 5 minutes. Add broth and pureed tomatoes. Bring to a boil and add sliced sausages. Simmer 10 minutes. Add tortellini and cook for 3 minutes. Serve with freshly grated Parmesan.

- My daughter served this soup for a group of women. We found it to be very fast and very good! We served it with pieces of garlic bread.
