Ice Cream, Jelly, Raspberry/Jello, or Pudding Roll

  • 3 eggs
  • 1 c sugar
  • 1/4 c cold water
  • 1 t vanilla
  • 1 c flour
  • 2 t baking powder
  • 1/2 t salt
  1. Beat eggs with electric mixer on high speed until thick and light colored, 5 minutes. Add sugar very gradually. Continue to beat until light and fluffy.
  2. Add water and vanilla and mix well.
  3. Add dry ingredients to mixture and blend on low speed until mixed thoroughly.
  4. Pour into greased, waxed paper-lined jelly roll pan. Bake at 375 degrees for 12-15 minutes.
  5. Loosen edges and turn out of pan immediately onto tea towel sprinkled heavily with sugar. Remove waxed paper. Roll into tea towel and cool completely on a rack.
  6. Unroll cooled cake and spread evenly with desired filling. Roll up carefully.
A delicious dessert. A bit tricky to make, but you can do it!
