Impossible Italian Chicken Pie
  • 3/4 cup cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1-1/4 cups cooked cubed chicken
  • 1 (4 oz.) can sliced mushrooms, well drained
  • 1-1/4 cups shredded mozzarella cheese
  • 1 tsp. dried Italian herbs
  • 1 (6 oz.) can Italian flavored tomato paste
  • 1 cup milk
  • 2 eggs
  • 2/3 cup baking mix
  • 1/4 tsp. pepper
  1. Preheat oven to 400 degrees. Grease a 10" pie pan, and layer cottage cheese and Parmesan cheese in bottom of pan. In small bowl, combine chicken, drained mushrooms, 1/2 cup mozzarella cheese, Italian seasoning, and tomato paste. Spoon this mixture over Parmesan cheese.
  2. In medium bowl, combine milk, eggs, baking mix and pepper and beat with wire whisk until smooth. Pour over chicken mixture. Bake at 400 degrees for 25-30 minutes until golden brown. Sprinkle with remaining mozzarella cheese and bake 5 minutes longer until knife inserted in center of pie comes out clean. Cool 5 minutes before slicing. Serves 6-8
