Impossible Pie
  • Cooking Time: 60 minutes
  • Preparation Time: 10 minutes
  • 4 eggs
  • 1/2 cup plain flour
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 1/2 cup butter/margarine
  • 2 cups milk
  • 1 cup dessicated coconut
  1. Blend all ingredients.
  2. Pour mixture into a 26 cm greased pie plate.
  3. Bake in a moderate oven (210°C) for 1 hour, or until centre is firm.
I found this in a recipe book of my Mum's when I first started getting an interest in baking. It was refreshingly easy, and is lovely hot straight out of the oven, or chilled with icecream. I don't agree with the name because it's the opposite of impossible. I prefer Magic Pie! By blending all ingredients, there forms a flour crust, a vanilla custard centre, and a coconut topping. See? Magic!! This may not be the most sophisticated dessert you ever make, but it's a great way to bake with someone that doesn't believe in themselves as a cook. And, like I said, it's yum!
