Individual Dulce de Leche Cheesecakes

  • 2 8 oz. packages of cream cheese, softened
  • 1 t. vanilla
  • 3/4 c. sugar
  • 2 eggs
  • GF vanilla wafers (homemade or store bought)
  • 1 recipe of Dulce de Leche
  1. Beat cream cheese until smooth. Add sugar, eggs, and vanilla. Beat until fluffy. Put cupcake liners in muffin pan. Place a GF vanilla wafer in bottom of each cupcake liner. Fill each hole 3/4 full. Put a scant teaspoon of Dulce de Leche on top and swirl it into the cheesecake filling. Bake in an oven preheated to 350F for 15-20 minutes until knife comes out with moist crumb. Cool to room temperature. Microwave the remaining Dulce de Leche for 2 minutes at 50% power. Stir. Spoon a dollop on each cheesecake. Chill before serving.
Dulce de Leche cheesecake is the favorite cheesecake of the women in our family. We used to enjoy it at the Cheesecake Factory, now we can enjoy it Gluten Free at home.
