Individual Dulce de Leche Cheesecakes

- 2 8 oz. packages of cream cheese, softened
- 1 t. vanilla
- 3/4 c. sugar
- 2 eggs
- GF vanilla wafers (homemade or store bought)
- 1 recipe of Dulce de Leche
DIRECTIONS
- Beat cream cheese until smooth. Add sugar, eggs, and vanilla. Beat until fluffy. Put cupcake liners in muffin pan. Place a GF vanilla wafer in bottom of each cupcake liner. Fill each hole 3/4 full. Put a scant teaspoon of Dulce de Leche on top and swirl it into the cheesecake filling. Bake in an oven preheated to 350F for 15-20 minutes until knife comes out with moist crumb. Cool to room temperature. Microwave the remaining Dulce de Leche for 2 minutes at 50% power. Stir. Spoon a dollop on each cheesecake. Chill before serving.
