Instant Party Potatoes

  • 3 c water
  • 3/4 c milk
  • 6 T butter
  • 1 t salt (or less)
  • 4 c Hungry Jack instant potato flakes
  • 8 oz sour cream
  • 8 oz cream cheese
  1. Heat water, milk, salt and butter just to boiling. Stir in potato flakes. Beat sour cream and cream cheese until blended. Add to hot potatoes. If too stiff, add a little milk. Put in 2 qt casserole dish. Dot with butter and sprinkle with paprika. Bake 30 minutes at 350. Can be refrigerated for several days or frozen for later use. Then bake in 350 degree oven for about an hour. Thaw frozen potatoes before baking or baking time will be longer than one hour. Batch doubles and triples easily.
A favorite of graduation parties and holidays - in multiple batches! Also heats well in crock pot.
