Irene's Ravioli
INGREDIENTS
- 1 roasted chicken
- 1 cooked roast beef
- 3 large stalks celery
- 1 medium onion
- 1/2 of small box of frozen spinach (cooked and chopped)
- 14 saltine crackers (crushed)
- 3 eggs (2 if very large)
- 1/4 cup Parmesan cheese
- 1/4-1/2 teaspoons garlic powder
- 2 tablespoons crushed parsley
- Salt and pepper
- Ravioli dough
DIRECTIONS
- Season the chicken and roast beef while cooking.
- Grinds meats together when fully cooked.
- Grind celery and onion with meat.
- Add in all the other ingredients.
- If it's too moist add crackers to dry out.
- For the ravioli dough, run through noodle maker - don't roll thinner than #5.
- For the Sauce: Saute 1/3 cup butter, 2 tablespoons oil and 1/4 chopped onion. Add 1 pound hamburger, and salt, pepper and garlic powder to taste. Add 1/4 teaspoon basil, 1/4 teaspoon oregano, 1 bay leaf, 1/4 teaspoon rosemary and 1 small can tomato sauce and let simmer.
