Irish Potato Puffs

INGREDIENTS
- 1 cup mashed potatoes (I use instant mashed potatoes)
- 1/2 cup flour
- 2 eggs
- salt
- cracked pepper
DIRECTIONS
- Beat yolks until creamy, add mashed potatoes, mix thoroughly.
- Sift together dry ingredients and add to potatoes.
- Beat whites well and fold into mixture.
- Drop from tip of spoon into deep hot fat and fry a delicate brown.
- Drain on paper and serve hot.
