Irish Potato Puffs

INGREDIENTS
  • 1 cup mashed potatoes (I use instant mashed potatoes)
  • 1/2 cup flour
  • 2 eggs
  • salt
  • cracked pepper
DIRECTIONS
  1. Beat yolks until creamy, add mashed potatoes, mix thoroughly.
  2. Sift together dry ingredients and add to potatoes.
  3. Beat whites well and fold into mixture.
  4. Drop from tip of spoon into deep hot fat and fry a delicate brown.
  5. Drain on paper and serve hot.
