Italian Chicken w/ Wheat Pasta, Mozzarella and Satueed Apples

  • 6 oz. Boneless, skinless chicken tenderloins, trimmed
  • 1/2 cup Whole wheat rotini pasta
  • 1 Small honey crisp apple
  • 1/4 cup Mozzarella shredded cheese
  • 1 tsp. Extra virgin olive oil
  • 1 tsp. Italian seasoning
  • Pinch of salt
  • Pinch of ground black pepper
  1. Bring 3 cups water to boil in a small pot
  2. Heat olive oil in a large frying pan over medium heat
  3. Cut chicken tenderloins into 1 inch cubes
  4. Add pasta to boiling water, let cook for 10-12 minutes, or until tender
  5. Add chicken cubes to large frying pan
  6. Add Italian seasoning, salt and pepper to chicken, let cook for 10 minutes, stirring occasionally
  7. While chicken is cooking, cut honey crisp apple into thin slices
  8. Add apple slices to chicken after it the 10 minutes are up
  9. Let apple slices cook with chicken for 5 minutes, or until chicken is cooked through and apples are softened
  10. Drain pasta, split between two plates
  11. Sprinkle half of mozzarella cheese on each plate of pasta
  12. Top each plate with chicken and apple slices
  13. Enjoy!
This recipe was so delicious! I wanted something salty and sweet, and boy did it crush my craving! The mozzarella cheese paired so well with the Italian seasoning and the apple slices.
