Italian Eggplant Relish
INGREDIENTS
- 1 eggplant cut into squares
- 1 red bell pepper diced
- 2 celery stalks sliced
- 4 garlic cloves minced
- 1 medium onion chopped
- 6 TBSP of olive oil
- 1 cup marinara sauce *see recipe
- 2 oz. capers
- salt to taste
- parsley chopped to garnish
DIRECTIONS
- Preheat oven at 350 degrees.
- In bowl mix eggplant, bell pepper, celery, garlic and onion then toss with oil.
- Transfer to a baking sheet and bake for 30 minutes.
- Take out of the oven, place in a pan and add the marinara sauce and capers then cook for 10 minutes.
- Add salt to taste.
- Let cool.
- Place in a bowl and toss with parsley.
