Italian Eggplant Relish
CATEGORIES
INGREDIENTS
  • 1 eggplant cut into squares
  • 1 red bell pepper diced
  • 2 celery stalks sliced
  • 4 garlic cloves minced
  • 1 medium onion chopped
  • 6 TBSP of olive oil
  • 1 cup marinara sauce *see recipe
  • 2 oz. capers
  • salt to taste
  • parsley chopped to garnish
DIRECTIONS
  1. Preheat oven at 350 degrees.
  2. In bowl mix eggplant, bell pepper, celery, garlic and onion then toss with oil.
  3. Transfer to a baking sheet and bake for 30 minutes.
  4. Take out of the oven, place in a pan and add the marinara sauce and capers then cook for 10 minutes.
  5. Add salt to taste.
  6. Let cool.
  7. Place in a bowl and toss with parsley.
