Italian Josephinas

  • 4 oz. sliced olives
  • 1/4 lb. butter, softened to room temperature
  • 1 cup basil pesto
  • 1/2 lb. mozzarella cheese, grated
  • 2 loaves Sour dough bread, small diameter
  • Parsley sprigs
  1. In medium bowl, mix olives, butter, pesto and cheese until well blended. Slice Sour Dough bread into thin slices and spread amply with the cheese mixture. Make sure to completely cover the bread. Put bread slices on ungreased cookie sheet in preheated broiler and broil about 5 to 10 minutes until spread is bubbly. Serve on large serving plate garnished with parsley sprigs.Serves 10 to 12
I saw this great recipe for Josephinas and I was really in the mood for a yummy bread recipe but the Josephinas didn't really go with what I was serving for dinner. So I decided to alter it with a mediterranean theme. Im happy with how it turned out but if the pesto is too strong, you might want to cut the pesto down to 1/2 cup and add 1/2 cup of mayo.
