Italian Soda Bread
INGREDIENTS
- Cooking Time: 40 to 45 minute
- Servings: 6
- Preparation Time: 20 minutes
- 3 cups of all purpose flour
- 1 cup of bread flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoon baking soda
- 1 1/2 teaspoon cream of tartar
- 1 teaspoon salt
- 7 tablespoons unsalted butter - softened
- 1 tablespoon butter - melted baste dough before cooking
- 1 1/4 cup buttermilk
- 1 egg, extra large lightly beaten
- 1 cup raisins - or dried cranberries
DIRECTIONS
- 1. Preheat oven to 400 degrees
- 2. Mix flour, sugar, baking soda, cream of tartar and salt in a bowl
- 3. Work soft butter into mixture
- 4. Add buttermilk, egg and raisins - mix together with a fork until dough comes together - do not over mix
- 5. Coat counter with flour and turn out dough onto counter
- 6. knead lightly for approximately 15 turns
- 7. Pat dough into round ball
- 8. With a knife score a cross on top of ball
- 9. Put into a greased pan or use parchment paper
- 10. Baste with melted butter
- 11. Bake until golden brown and internal temperature is 170 degree
RECIPE BACKSTORY
When I came to work at WWMS, Pat Dykstra started to talk to me about her St. Patrick's Day celebrations. She described the food and how her mom was so into St. Patty's Day. She made the holiday sound so warm and inviting that I decided to try it. I used her advise and found some recipes and, I have to say, Corned Beef and Cabbage is my favorite dinner, especially with this wonderful soda bread.
