Italian Wedding Salad
  • 6oz dried orzo pasta, 32frozen cooked meatballs, ½cup Italian salad dressing, 6oz artichoke hearts(drained & chopped), 6oz pkg baby spinach, ¼cup chopped walnuts, salt/pepper to taste, parmesan cheese;
  1. Cook pasta according to pkg directions; drain well. Meanwhile, in 4qt Dutch oven combine meatballs and salad dressing. Cook over medium heat until meatballs are heated through, stirring occasionally. Stir in drained pasta, artichoke hearts, spinach, and walnuts. Heat and stir until spinach is wilted. Season to taste with salt and pepper. Sprinkle w/cheese and enjoy!
