J's Cauliflower Salad
INGREDIENTS

  • one head of cauliflower
  • avocado (peeled and diced)
  • 3 stalks of celery
  • 1/4c. olive oil (approx.)
  • juice of one lemon...plus a bit more if you like
  • salt and pepper to taste
DIRECTIONS
  1. Cut the cauliflower into teeny-tiny pieces. It's tedious, but the salad will taste better! Add to medium serving bowl. Chop the celery, and add to the bowl with the cauliflower. Add the diced avocado and mix...being careful not to smush the avocado too much. Wisk the oil and lemon with salt and pepper and drizzle over the veggies.

RECIPE BACKSTORY
My husband and I went to a couple's house for dinner about 15 years ago. Little did we know that they were members of a church that was actively recruiting. We had a great dinner, avoided conversion, and left with my very favorite way to eat cauliflower.
