Jan's Nana's Lemon Poppyseed Shortbread

  • 1 cup butter
  • 1/2 cup sugar
  • 2 cups all purpose flous
  • 1 tsp. vanilla
  • 2 Tbls. lemon zest
  • 2 Tbls. poppy seeds
DIRECTIONS
  1. Cream butter, vanilla, and sugar
  2. Add flour, mixing well
  3. Add zest and poppy seeds, mixing until evenly incorporated
  4. Pat into a 1/4 inch circle and cut into triangles
  5. Place on ungreased cookie sheet lined with parchment
  6. Prick tops with a fork and bake at 300 degrees for 25-30 minutes
