Jan's Nana's Lemon Poppyseed Shortbread

- 1 cup butter
- 1/2 cup sugar
- 2 cups all purpose flous
- 1 tsp. vanilla
- 2 Tbls. lemon zest
- 2 Tbls. poppy seeds
DIRECTIONS
- Cream butter, vanilla, and sugar
- Add flour, mixing well
- Add zest and poppy seeds, mixing until evenly incorporated
- Pat into a 1/4 inch circle and cut into triangles
- Place on ungreased cookie sheet lined with parchment
- Prick tops with a fork and bake at 300 degrees for 25-30 minutes
