Jana's Pumpkin bars

  • 2 c cooked pumpkin
  • 1 c oil
  • 1 2/3 c sugar
  • 4 eggs
  • 1t vanilla
  • 2 c flour
  • 1t baking soda
  • 2 t baking powder
  • 1/2 t salt
  • 2 t cinnamon
  • frosting
  • 3 oz cream cheese - softened
  • 3/4 stick of butter
  • 2 C powdered sugar
  • 1 t vanilla
DIRECTIONS
  1. blend pumpkin, oil, sugar, eggs, and vanilla
  2. slowly add dry ingredients - flour, baking soda, baking powder, salt and cinnamon
  3. once incorporated, mix well
  4. spread in 12x18 jelly roll pan
  5. bake at 325 degrees for 25 - 30 minutes
  6. while cooling in pan, make frosting
  7. beat cream cheese, butter, powdered sugar, and vanilla until fluffy
  8. Once bars are cool, spread cream cheese frosting over top.
  9. If you let frosting set and cool slightly, the cuts will be much cleaner
RECIPE BACKSTORY
If you refrigerate the bars after you make them, it helps set them up better. They are a great alternative to the traditional pumpkin pie
