Japanese Fruit Cake
INGREDIENTS
- 1 cup butter
- 2 1/2 cups sugar
- 5 eggs
- 3 1/2 cups sifted cake flour
- 1 1/2 cups buttermilk
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 1 cup chopped raisins
- 1/2 cup finely chopped nuts
DIRECTIONS
- Prepare 4 (8 inch) pans.
- Cream butter with sugar.
- Add eggs, one at a time, beating well after each addition.
- Use 1/4 cup of the flour to mix with the raisins & nuts.
- Sift remaining flour with salt and soda.
- Add to first mixture, alternating with buttermilk and vanilla.
- Divide batter by pouring 1/4 of it into one layer pan; 1/4 of it into another layer pan.
- Mix spices and floured raisins & nuts into remaining batter.
- Pour into last 2 layer pans.
- Bake at 350 degrees for 30 to 35 minutes. Cool on racks.
- Short Cut:
- Use commercial spice cake and white cake mixes. Adding raisins & nuts to spice cake.
