Jelly Doughnut Muffins~

INGREDIENTS
  • 2 Tbs shortening
  • 1/2 cup sugar
  • 1 egg
  • 2 cups of flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnanmon
  • 1/2 cup milk
  • 1/4 cup jelly
  • 1 cup of chopped nuts
  • Melted butter
DIRECTIONS
  1. Cream the shortening and sugar. Add the eggs and mix well. Add all remaining ingredients except for the (jelly and nuts and butter.)
  2. Mix alternately with the milk. Spray muffin tins with some cooking spray and fill 1/2 full.
  3. Place a spoonful of jelly on top of the batter.
  4. Top with more batter and brush lightly with butter, then sprinkle with the nuts and a little more cinnanmon.
  5. Bake at 400 degrees for 20-25 minutes.~~Janie
  6. You may want to bake at a lower temp. or check after 20 minutes of baking at the 400 degree temp.
