Jen's Black Bean and Corn Salsa

  • 1 bag frozen white petite corn, cooked and drained well
  • 1 can black beans, drained well
  • 1 16 oz container Medium hot salsa
  • 2 limes
  • 4 T roasted garlic
  • 1 yellow onion, diced and caramelized
  1. Mix roasted garlic and caramelized onion together well
  2. Add corn and mix well
  3. Add black beans and salsa and mix
  4. Juice lime with wooden reamer and mix in, taste
  5. Add additional lime if needed
I really like black bean and corn salsa, and usually just buy it at the store, having ventured into starting to make regular salsa - I decided to give the black bean version a try as well. Since most of the ingredients are premade, the order of how things are mixed is key for me, as the roasted garlic and onion will get everything else "mushed up" if they aren't the first ingredients
