Jen's Caulifower Soup

  • 1 large yellow onion
  • 1 large head cauliflower
  • 2 tsp or more "better than bouillion" chicken flavor
  • 6 cups or so of good water
  • 2 tbs butter
  • 2 tbs olive ol
  • fresh garlic
  • optional: one can coconut cream and 3 tablespoons curry powder
  • or...1/2 cup half and half or milk.. to taste
  • and 1 cup shredded sharp cheddar cheese
  • fresh pepper
  • best croutons for garnish/fresh parsley
  • optional: sprinkle with parmesan shavings and crushed croutons.
  • Lowest fat version- omit cream, use low fat milk and omit any cheese
  1. Melt butter and oil in soup pot. Add onion cut into chunks. caramelize for about 15 minutes until golden. Add cauliflower breaking off pieces over the pot. add garlic, Add water just enough to cover the vegies. cover and bring to boil, then simmer for 15 minutes or so until super soft. Use hand blender in pot to puree mixture. Add cream ,or coconut and curry. continue to blend in pot. season to taste. Can be made with no cream or coconut.
  2. Garnish with Cilantro, shredded coconut, chopped peanuts or , croutons and cheese and parsley.
