Jerky Turkey Burgers With Papaya Salsa
INGREDIENTS
  • 1 1/2 lb Ground Turkey
  • 1 Garlic Clove, Minced
  • 2 Scallions, Thinly Sliced
  • 1 Serrano Or Jalapeno Pepper, Minced
  • 1 Ginger Root, Grated
  • 2 tsp Thyme, Chopped
  • 1 tsp Allspice
  • 1/2 tsp Nutmeg
  • 1 tsp Black Pepper
  • Salt
  • Extra Virgin Olive Oil
  • 1 Ripe Lime, Juiced
  • 4 Bib or Green Leaf Lettuce Leaves
  • 4 Kaiser Rolls, Split
  • 1 large Papaya, Diced
  • 1 Red Bell Pepper, Diced
  • 1/2 Red Onion, Diced
  • 1 Serrano Or Jalapeno Pepper, Chopped
  • 2 Tbsp Cilantro, Chopped
  • 1 Navel Orange, Juiced
  • Salt
DIRECTIONS
  1. *Preheat large non-stick skillet, indoor grill, or tabletop grill to medium-high heat
  2. *Combine turkey, garlic, scallions, ginger, thyme, allspice, nutmeg, salt & pepper
  3. *Form mixture into 4 large patties, no more than and inch thick; drizzle patties with a touch of oil
  4. *Place patties in a hot pan or on a hot grill and cook 6 minutes on each side
  5. *Squeeze the juice of 1 ripe lime over patties before removing them from the heat
  6. *Place the cooked patties on bun bottoms and top with lettuce
  7. *Combine the papaya, red bell pepper, red onion, pepper, cilantro, and orange juice in a bowl
  8. *Season salsa mixture with salt to taste
  9. *Pile salsa on top of the lettuce and add bun tops to burgers
  10. *Serve with chili lime avocados and pineapple wedges, if desired
