Joanne's Ham Loaf - Original recipe

  • Ham Loaf:
  • 1 lb raw ham
  • 1 lb lean pork, ground
  • 1 lb veal
  • 1 1/2 cup milk
  • 2 eggs
  • 1 1/2 cups cracker crumbs if desired
  • Salt
  • Pepper
  • Laura Barden's Secret Sauce:
  • 1 1/2 cups brown sugar
  • 1 Tbsp mustard
  • 1/2 cup water
  • 1/2 cup vinegar
DIRECTIONS
  1. Mix together ham loaf ingredients.
  2. Form into loaf, cracker crumbs may be added if desired
  3. Mix together Laura Barden's secret sauce ingredients
  4. Pour 1 1/2 cups of Laura Barden's sauce over loaf and bake.
  5. Bake for 2 hours at 325 degrees
RECIPE BACKSTORY
This recipe was made in 1935 at a girls camp near Hazelhurst, Wisconsin. Popular in its day, hamloaf was a a baked meat dish, similar to meatloaf, made of ground ham and ground pork and combined with other ingredients to form a loaf like shape.Distinct in color and taste from meatloaf, hamloaf is often baked with a sweet glaze, often consisting of brown sugar, molasses, pineapples, or cherries. Some cooks made it with Spam.
