Judy's Carrot Cake

  • Cake:
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 4 teaspoon cinnamon
  • 1 cup oil
  • 4 eggs
  • 3 cups shredded carrots (about 1lb carrots shredded)
  • 1 teaspoon of vanilla
  • 3/4 cup raisins
  • 3/4 cup chopped pecans (optional)
DIRECTIONS
  1. Cake: Combine sugar, flour, baking soda, salt, cinnamon
  2. Add oil, eggs, shredded carrots, vanilla, raisins and pecans
  3. Grease 2 9" layer pans. Line the bottom of each with waxed paper, then grease the paper.
  4. Divide the batter between the 2 pans. Bake at 350 degrees for 25-40 minutes until the cake springs back.
