Julie's Oatmeal Cake

INGREDIENTS
  • 1 C. oatmeal
  • 1 1/2 C. hot water
  • 1 C white sugar
  • 1 C brown sugar
  • 1 Stick butter
  • 2 Eggs
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 C. Flour
  • 1 tsp. soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
DIRECTIONS
  1. Pour water over oatmeal and let sit for 5 minutes
  2. Cream white sugar, brown sugar, butter, eggs, salt and extract. Add oatmeal.
  3. Add flour, soda, powder and cinnamon to wet mixture, mixing thoroughly.
  4. Pour into a 9 x 13 pan.
  5. Bake in a preheated 350 oven for 30-40 minutes depending on oven. Cake is done when knife inserted comes out clean.
RECIPE BACKSTORY
I usually start the fudge during the last 5 minutes the cake is baking and pour over the cake the second it comes out. I always use a clear glass Pyrex to watch the fudge seep down the side. There is always a family fight over who gets the end pieces of the cake. They are encased in the peanut butter fudge! YUMMY!
