KFC (aka NRFC aka BFC aka DFC)
INGREDIENTS

  • 4 cups of plain flour
  • 1 cup of self raising flour
  • 1/2 Tb of oregano & thyme
  • 1 Tb of brown ginger
  • 2 Tb of garlic powder
  • 1 Tb of mustard powder
  • 1 Tb of celery salt
  • 1 Tb of black pepper
  • 1/3 TB of sea salt
  • 2 Tb of white pepper
  • 4 Tb of paprika
  • 4 Eggs (yolks removed)
  • 1 cup of milk
  • Chicken wings or chicken pieces to fry
  • Oil for deep frying: Rice Bran Oil is best
DIRECTIONS
  1. Add the flour to the herbs and spices
  2. Season the chicken in a mix when at room temperature
  3. Egg wash your chicken using egg white and milk. Then re-season in the mix.
  4. Fry the chicken for five to six minutes at 160C to 165C before placing it in a pre-heated 80C oven - then give it a final 90-second fry prior to serving.
RECIPE BACKSTORY
This is one method to deep fry chicken, which doesn't involve butter milk. Whether this taste exactly like KFC Chicken or not, it is damned good fried chicken. There's no need for a sauce, but if you like it spicy then you might want your favourite chilli sauce to dip. Be sure to have an infrared or candy thermometer. The temperature of the oil is quite important. enjoy
