KY Kate's Chili Beans
  • 1-2 pounds ground beef
  • 1 large onion
  • green pepper (optional)
  • 1 quart tomatoes
  • 1 can tomato sauce
  • 1 tsp salt (to taste)
  • 1/4 tsp pepper (to taste)
  • 2-3 Tbsp chili powder
  • 1 tsp cider vinegar
  • 1/8 tsp celery seed
  • 2-3 cans light red kidney beans (drained)
  1. Brown ground beef with onion and green pepper (optional).
  2. Add other ingredients. Cook at least an hour or until as thick as you like. You can add cornstarch that has been dissolved in a little water if you like your chili beans thicker.
Nothing fancy about this recipe, but it is good comfort food. Set out bowls of sour cream, shredded cheese, onions, etc. for toppings. A plate of grilled cheese sandwiches goes well with this
