Kathryn's Baked Potato Soup

  • Servings: 8
  • 4 large baked potatoes
  • ⅔ cup flour
  • ¾ tsp salt
  • 4 chopped green onions
  • 1 ¼ cups shredded cheddar cheese
  • ⅔ cup butter
  • 6 cups milk
  • ½ tsp pepper
  • 12 slices cooked bacon
  • 8 oz sour cream
DIRECTIONS
  1. Scoop out potatoes and chop
  2. Melt butter, add flour to make roux. Gradually add milk, stir and cook until thick.
  3. Add potatoes, salt, pepper, and 1 cup of cheese
  4. Stir in sour cream
  5. To serve, top bowl with green onion, crumbled bacon and cheese
