Kathy Henderson’s Pineapple Bread Pudding
INGREDIENTS
  • Cooking Time: 45 mins to 1 hr
  • Servings: 6-8

  • 1 (16oz) can crushed pineapple
  • 1/2 cup sugar
  • 2 Tbsp flour
  • 3 eggs
  • 3 slices of bread, cubed
  • 1/3 cup butter – melted
DIRECTIONS
  1. Beat eggs, sugar, and flour together well.
  2. Stir in pineapple.
  3. Pour mixture into greased 9 x 9 baking dish.
  4. Top with bread cubes and pour butter over bread evenly.
  5. Bake 45 mins to 1 hr uncovered until bread is toasted
RECIPE BACKSTORY
This recipe can easily be doubled and made in a bigger pan. Goes great with ham. This recipe became such a huge hit that my mother was jokingly told she could not attend family dinners unless she brought this dish with her! Submitted by: "Wendy Buehler"
