Kentucky Jam Cake

  • 2 cup sugar
  • 1 cup butter
  • 5 eggs
  • 1 cup crushed pineapple
  • 1 cup Jam
  • 1 cup apple butter
  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. cloves
  • 1 tsp. coco
  • 1 cup nuts
  • 1 cup buttermilk
  • ICING
  • 2 cups brown sugar
  • 1/3 cup white sugar
  • 1/2 cup butter
  • 3/4 cup cream
  • 2 cup powdered sugar
DIRECTIONS
  1. Mix butter & sugar together with mixer. Add eggs one at a time while mixing. Add the pineapple, jam & apple butter. Add the dry ingredients slowly while mixing. Add the buttermilk in between. Always start with flour and end with flour. Pour mixture into 4 8" pans. Bake for 35 mins. @ 325*

  3. Boil first 4 ingredients for 4 mins. Add powdered sugar, mix well and quickly spread over cooled cake.

My mother always made us Jam Cakes as children, it always brings sweet memories of her. Sweet and delicious
