Keri's Oven Roasted Potatoes, Onions, and Carrots
INGREDIENTS
  • Cooking Time: 45 minutes

  • Preparation Time: 15 minutes
  • Small red potatoes, washed and cut into quarters
  • One sweet onion, roughly chopped
  • About 3 or 4 carrots, peeled & cut into quarters
  • 4 cloves of garlic, minced
  • 1\2 a tbsp Italian herb seasoning
  • Juice of half a lemon
  • About 3 to 4 tbsp of olive oil
DIRECTIONS
  1. Preheat oven to 400 degrees Fahrenheit
  2. Wash potatoes and carrots. Peel the outside layer of carrots with a vegetable peeler. Keep the skin on potatoes.
  3. Quarter the potatoes, carrots, and roughly chop the onion
  4. Toss vegetables in a clear glass or dark metal baking dish
  5. Add the olive oil, minced garlic, lemon juice, and Italian herb seasoning
  6. Mix well
  7. Roast in oven for about 45 minutes until edges of vegetables begin to crisp, but not burn

I usually make this side dish with my easy crockpot pot roast. One day I decided to roast the vegetables separately. This is the best side dish for any beef recipe.
