Keto Choc Chip Cookies
INGREDIENTS

  • 1 & 1/2 Cups Almond Flour
  • 3/4 Cup Sugar Free Dark Chocolate Chips
  • 1/2 Cup Butter
  • 3/4 Cup Baking Sweetener
  • 1 Teaspoon Sugar Free Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 1 Egg
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Xanthan Gum
  • Pinch Salt
DIRECTIONS
  1. Preheat oven to 160°C (Fan Forced), line a baking tray with baking paper. Add the butter to a bowl and microwave for 30 seconds to soften only slightly (to beat easier). Add the Sweetener to the Butter in a bowl and beat until combined. Add the Egg, Vanilla Extract and Maple Syrup, beat for no longer than 15 seconds or else you might make scrambled eggs!
  2. Add the Almond Flour, Baking Powder, Xanthan Gum and a pinch of Salt to Egg mixture. Beat until well combined. Add the Chocolate Chips and using your hands, combine well.
  3. Using an ice cream scoop, scoop out 10 balls and roll them in the palm of your hand. Place on the baking tray with 3 to 4 cm between each cookie.
  4. Bake for 20 to 25 minutes or until Golden, allow to rest on bench top for at least 30 minutes prior to eating. This allows the cookies to harden.
