- 1 & 1/2 Cups Almond Flour
- 3/4 Cup Sugar Free Dark Chocolate Chips
- 1/2 Cup Butter
- 3/4 Cup Baking Sweetener
- 1 Teaspoon Sugar Free Maple Syrup
- 1 Teaspoon Vanilla Extract
- 1 Egg
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Xanthan Gum
- Pinch Salt
DIRECTIONS
- Preheat oven to 160°C (Fan Forced), line a baking tray with baking paper. Add the butter to a bowl and microwave for 30 seconds to soften only slightly (to beat easier). Add the Sweetener to the Butter in a bowl and beat until combined. Add the Egg, Vanilla Extract and Maple Syrup, beat for no longer than 15 seconds or else you might make scrambled eggs!
- Add the Almond Flour, Baking Powder, Xanthan Gum and a pinch of Salt to Egg mixture. Beat until well combined. Add the Chocolate Chips and using your hands, combine well.
- Using an ice cream scoop, scoop out 10 balls and roll them in the palm of your hand. Place on the baking tray with 3 to 4 cm between each cookie.
- Bake for 20 to 25 minutes or until Golden, allow to rest on bench top for at least 30 minutes prior to eating. This allows the cookies to harden.
