Keto Veggie Omelette

  • 2 eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup sliced mushrooms
  • 1/4 cup spinach leaves
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  1. In a bowl, beat the eggs and season with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add bell peppers, onions, and mushrooms to the skillet, and sauté until slightly softened.
  4. Add spinach to the skillet and cook until wilted.
  5. Pour the beaten eggs over the cooked veggies in the skillet.
  6. Sprinkle shredded cheddar cheese on top of the eggs.
  7. Cook until the omelette is set and the bottom is golden brown.
  8. Carefully fold the omelette in half with a spatula, and cook for another minute to melt the cheese.
