Key Lime Bites
INGREDIENTS
  • 3/4 cup butter, softened
  • 1 cup powdered sugar, divided
  • 2 T. lime juice
  • Zest of 2 limes
  • 1 T. vanilla extract
  • 1 3/4 cup plus 2 T. flour
  • 2 t. cornstarch
  • 1/2 t. salt
DIRECTIONS
  1. Cream butter and 1/3 cup powdered sugar.
  2. Blend in lime juice, zest and vanilla; set aside.
  3. In another bowl, whisk together flour, cornstarch and salt.
  4. Add to butter mixture, stirring until combined. Roll dough into a log; chill for one hour.
  5. Slice log into 1/8 inch thick rounds; place on parchment lined baking sheets.
  6. Bake at 350 for 11 to 14 minutes or until slightly golden.
  7. Place remaining powdered sugar in a large plastic bag.
  8. Remove cookies from oven and allow to cool for several minutes.
  9. While still warm, place cookies in bag with powdered sugar; toss gently to coat.
