Kohlrabi-Broccoli Side Salad
  • Servings: 4-6 as a side dish
  • Preparation Time: 5-10 min
  • 2-3 kohlrabi bulbs, peeled and grated
  • 1 head of broccoli, cut into florets
  • ¼ cup mayonnaise or veganaise (vegan mayo)
  • ¼ cup neutral tasting oil (ex: sunflower oil)
  • 4 tablespoons red wine vinegar (or apple cider vinegar)
  • ½ tablespoon dijon mustard
  • Sea salt and ground pepper to taste
  • A pinch of paprika (optional - to give it colour)
  1. SALAD: In a large salad bowl, mix the grated kohlrabi bulbs and the broccoli florets.
  2. DRESSING: In a mason jar, add mayonnaise, oil, red wine vinegar and dijon mustard. Put on lid and shake well. Add salt and pepper to taste. Add paprika.
  3. ASSEMBLY: Drizzle the dressing over your prepared salad.
  4. Drizzle in the Dijon-Mayonnaise-Red Wine Vinegar Dressing and serve!
  5. *** If you plan to keep this recipe longer, keep the dressing aside and add it to your salad just before eating.
