Kohlrabi Salad

- 2 cups of kohlrabi (stem), cut into matchsticks
- 1/4 cup radishes or rabioles (white turnips), sliced into bite-size pieces or cut in matchsticks
- 2 cups of lettuce
- 1 cup of arugula salad (optional- just add more lettuce if you don't have any)
- 2 Tbsp freshly squeezed lemon juice
- 1/2 tsp Dijon mustard
- 1/4 tsp sea salt
- 4 Tbsp oil (sunflower, etc.)
- Pepper, to taste
DIRECTIONS
- In a bowl, combine kohlrabi, rabioles or radishes, lettuce, and arugula.
- Combine the lemon juice, mustard, sea salt and oil in a jar. Shake thoroughly and add to salad. Season with salt and pepper.
