Kohlrabi Salad

  • 2 cups of kohlrabi (stem), cut into matchsticks
  • 1/4 cup radishes or rabioles (white turnips), sliced into bite-size pieces or cut in matchsticks
  • 2 cups of lettuce
  • 1 cup of arugula salad (optional- just add more lettuce if you don't have any)
  • 2 Tbsp freshly squeezed lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp sea salt
  • 4 Tbsp oil (sunflower, etc.)
  • Pepper, to taste
  1. In a bowl, combine kohlrabi, rabioles or radishes, lettuce, and arugula.
  2. Combine the lemon juice, mustard, sea salt and oil in a jar. Shake thoroughly and add to salad. Season with salt and pepper.
FEATURING: Kohlrabi, rabioles or radishes, lettuce, and arugula (optional). Just throw in whichever veggie you have at hand and use the following dressing or the dressing of your choice! Kohlrabi is quite mild and goes well with an array of dressings!
