Kon Loh Mee - Simple Chinese Noodle Dish From Singapore

INGREDIENTS
- 1 pound Hokkien noodles* (fresh yellow noodles)
- 4 cups water
- 12 stalks Chye sim* (Chinese mustard greens) or any other leafy green vegetable
- 2 teaspoons peanut oil
- 1 tablespoon sesame oil
- 1 tablespoon black soya sauce
- 1 tablespoon chilli sauce or to taste
- 1 pound char siew* (red barbecued pork), sliced
DIRECTIONS
- Heat water and simmer the green vegetable until just tender. Drain and reserve water. Cook noodles in the vegetable water according to direction on package, then drain.
- Combine sesame and peanut oils, soya sauce and chilli sauce and toss in a large bowl with the noodles. Serve garnished with the vegetable and char siew.
