LOUISIANA DIRTY RICE

INGREDIENTS
  • 1/4 cup onion, chopped
  • 1/4 cup celery leaves, chopped
  • 1/2 pound fresh andouille or pork sausage
  • 1 cup white long grain rice, uncooked
  • 2 cups water
  • 1 1/2 teaspoons ground cumin
DIRECTIONS
  1. In large skillet, brown sausage with the onion and celery
  2. until the sausage is just cooked and crumbled and the
  3. vegetables have softened. If sausage produces excess fat,
  4. drain. Add rice, water and cumin to the browned sausage
  5. mixture. Stir ingredients together and bring to a boil.
  6. Cover, reduce heat to low, and simmer for 20 minutes or
  7. until rice is tender
