Lasagna Pierogie
  • 10 to 12 boiled & mashed potatoes
  • 3/4 lb. Velveeta Cheese
  • 2 sticks butter (2 - 2 1/2 depending on how much butter you like)
  • 2 onions, diced
  • 1lb. lasagna noodles, cooked
  1. Cook lasagna noodles according to package. Mash potatoes; add cheese and mix well. Saute onions in butter until soft. Add 1/3 of butter/onion mixture to potatoes. Butter 9x13 inch baking dish. Place a layer of noodles in pan, then add a layer of potato-cheese mixture. Repeat until pan is full; ending with noodles. Pour remaining butter and onion on top. Cover with foil and bake for 30mins (or until heated through) at 350 degrees!
