Lasagna
INGREDIENTS
  • Cooking Time: 40
  • 1# ground beef - I use extra lean
  • 1 small onion - chopped
  • 2 tbs olive oil
  • 1 - 6oz can tomato paste
  • 1# 13 oz jar spaghetti sauce with meat
  • 2 eggs beaten
  • 1 1/2# Ricotta cheese
  • 1/3# mozzarella cheese
  • 1# Lasagna
  • 3 tbs parmesan cheese
  • salt, pepper, nutmeg
DIRECTIONS
  1. Meat Mixture - saute meat and onion in olive oil until cooked.
  2. Add tomato paste and spaghetti sauce and cook 10 minutes.
  3. Season to taste.
  4. Remove from stove
  5. Cheese Mixture - combine in a bowl lightly beaten eggs, Ricotta and mozarella.
  6. Add a dash of nutmeg to taste.
  7. Cook noodles as directed on package.
  8. Place a layer of noodles in lightly greased 9 X 13 pan. Next add a layer of the chese mixture, then a layer of lasagne, then a layer of meat.
  9. Repeat once endng with meat.
  10. Sprinkle with parmesan cheese.
  11. Bake at 350 for 40 minutes.

Cooks Notes: Leftovers can be frozen after cooking Make sure your top layer of lasagne is completely covered with meat mixture. Any exposed noodles will turn crispy during cooking. If I am running short on the meat mixture then I just add more spaghetti sauce to cover
