INGREDIENTS
  • Bar:
  • 2 to 3 teaspoons instant espresso powder*
  • 2 teaspoons hot water
  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa
  • 1/4 teaspoon salt
  • 1/2 cup Butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • Frosting:
  • 1/2 teaspoon instant espresso powder or Instant Coffee Granules
  • 1 tablespoon milk
  • 1 cup powdered sugar
  • 2 tablespoons Butter, softened
  • Garnish:
  • 1 to 2 tablespoons finely chopped chocolate-covered espresso roasted coffee beans
DIRECTIONS
  1. Heat oven to 350°F.
  2. Combine 2 to 3 teaspoons espresso powder and hot
  3. water in small bowl; stir until dissolved.
  4. Set aside.
  5. Combine sugar, flour, cocoa and salt in medium bowl.
  6. Stir in 1/2 cup melted butter, eggs, vanilla and dissolved espresso mixture; mix well.
  7. Spread batter into greased 8-inch square baking pan.
  8. Bake for 23 to 28 minutes or until toothpick inserted in center comes out clean.
  9. Frosting:
  10. Combine 1/2 teaspoon espresso powder and 1 tablespoon milk in small bowl; stir until dissolved.
  11. Add powdered sugar and 2 tablespoons butter.
  12. Beat at low speed, scraping bowl often, adding enough additional milk for desired spreading consistency.
  13. Frost cooled bars.
  14. Garnish:
  15. Sprinkle with chopped espresso beans.
