LauriAnne's Stuffed Zucchini
  • Cooking Time: 55 minutes total between sautéing and baking.
  • Preparation Time: 10 minutes
  • Zucchini (as much as you’d like to serve)
  • Butter
  • Yellow onion
  • Bella mushrooms
  • Mozzarella
  1. Preheat oven 350*
  2. Peel the zucchini and cut each in half lengthwise. Scoop out the insides so they look like canoes. Save the insides.
  3. Slice up your onion & your mushrooms and sautéed them in butter along with the zucchini insides.
  4. Stuff the zucchini canoes with this sautéed mixture and place on a cookie sheet.
  5. Sprinkle the mozzarella on top and bake for 45 minutes.
Easy to make and very flavorful stuffed zucchini.
